Overnight oatmeal has become my new favorite go to breakfast in the morning. It is so simple, filling and nutritious. Who would of thought oatmeal could be easy! Gone are the days of waiting for your oatmeal to cook in the morning!
This is my newest overnight oat recipes! My gluten free lemon blueberry muffins inspired this recipe of overnight oats. Its fresh, creamy and really light! If you love the taste of fresh lemon and almonds you will LOVE this oatmeal.
Lemon Scented Blueberry & Almond Overnight Oats Recipe
1/2 cup organic gf oats
1/2 cup almond milk or coconut milk
2tsp. almond butter
1/2 tsp. almond extract
zest of one lemon
1/4 c. frozen or fresh blueberries
1 tbsp. pure maple syrup
sliced almonds to top
Mix all ingredients together except for almond. Pour into an 8oz. mason jar and secure lid. The oats will keep in the fridge for up to 3 days.
I like to double or triple my recipes to get a few days worth of easy to grab breakfasts. Pair it with a hard boiled egg or two and you’ve got yourself one great nutritious start to the DAY!!
